Mini Pineapple Cakes

Ingredients:
1 can crushed pineapple
2 tbs butter
2/3 cup brown sugar
1 package pineapple-flavored cake mix

Drain pineapple and save the juice. Stir melted butter and brown sugar and then place the sugar mixture in 20-24 muffin cups after spraying muffin cups with olive oil. Place the drained pineapple over the sugar mixture. Prepare cake mix according to the directons but put the pineapple juice in place of the water. Put the batter in each muffin cup.
Bake 350 for 20-25 minutes
Let cool for 5 minutes and then take paper off and flip over onto dish or small bowl.
I served mine with homemade icecream -- see below.


Homemade Icecream

My son just turned 5 and we had a family party for him. I decided the whole family would help to make the icecream! Even my 92 year old grandma was shakin' the icecream!!!
It really only takes 10 min AND it's a great arm workout!!!! Just make sure you triple bag it. The salt water dips all over. My pants were covered in dried salt water the first time I made this!!!! Oh the shakin of the icecream is the only healthy part of this! It's so bad for you but oh so tasty!

Ingredients
2 tbs sugar
1 cup half & half
1/2 tsp vanilla extract
1/2 cup coarse salt
ice
gallon-sized Ziploc bag
pint-sized Ziploc bag

Put all the ingredients in the small bag. Put ice and the small bag inside the large bag. Then put the large bag inside a few plastic sacks. Put on a pair of mittens and start shakin it! Shake for 10 minutes. At that point it shoud have an icecream consistancy. The first time I made it I used heavy whipping cream and it hardened up in 5 minutes but it was to fat filled and creamy. The half and half allows you to enjoy a few bites at least!!

**Added bonus. I made one batch with dark cocoa powder......yum.
**Another I made with egg nog instead of half and half.......yum.
