Easy Spicy Vegetables and Farro
Last week I decided to try Farro and bought some from Costco (I can get a huge bag for a good deal at Costco). Farro is one of the oldest grains cultivated by humans. It's grown mostly in Italy. It is a grain with great protein and fiber with no sugar.

Ingredients:
1 cup farro (when uncooked)
4 cups of mixed veggies (frozen packaged -- so much easier)
oregano
crushed red pepper flakes
olive oil (I used lemon olive oil)
Makes 4 servings
Cook the farro as directed (3 cups water for 1 cup farro) over stove boiling for 15 min. While that is boiling sautee the veggies on the stove with a little olive oil (just a small amount because the water from the frozen veggies will heat it up and cook it). Depending on how spicy you want your dish add in some red pepper flakes while veggies are cooking. Lay out the farro and surround with veggies on the plate. Drizzle olive oil over the meal and sprinkle a little oregano and crushed red pepper on top for color and taste.
