Sourdough Bread

 Sourdough Bread



2/3 cup sour starter
1.5 cups warm water
1 tbs Fustinis Garlic Olive Oil

Stir together until like soup

3 cups bread flour

Mix by hand or wooden spoon until mixed but clumpy - cover wet towel WAIT 45 MIN

Add 1 tbs salt and FOLD 8 TIMES  -- cover wet towel WAIT 30 MIN

FOLD and STRETCH 8 TIMES  -- cover wet towel WAIT 30 MIN

FOLD and STRETCH 8 TIMES -- flatten out on counter ** and fold over itself form in ball. 

**this is when you can add cheese or other flavors and then fold into ball

Option 1: Leave on counter 3 or 4 hours if it's warm (or put in warm oven after baking something else)
Shape and flour. Preheat oven 450 with dutch oven in oven to heat up. When oven is at 450 take dutch oven out. Put parchment paper in dutch oven place bread in dutch oven and scour the top. Bake in covered dutch oven 20 min at 400. 40 min uncovered at 400. Total 60 min.

Option 2: Cover and put in refrigerator overnight. flatten out on counter ** and fold over itself form in ball.  **this is when you can add cheese or other flavors and then fold into ball. Shape and flour. Leave on counter covered for 1 hour. Preheat oven 450 with dutch oven in oven to heat up. When oven is at 450 take dutch oven out. Put parchment paper in dutch oven place bread in dutch oven and scour the top. Bake in covered dutch oven 20 min at 400. 40 min uncovered at 400. Total 60 min.

Put on cooling rack for at least 1 hour to cool before cutting into it.

Fresh Picked Tart Cherry Pie

Fresh Picked Tart Cherry Pie

Pick cherries off garden tree, pit the seeds, mix into bowl the following:
3 tbs corn starch
2/3 cup sugar
1 tsp pure vanilla extract
1/4 tsp almond extract
Stir until mixed
Pour in crust (I like to use pecan crust)
Place in fridge for 1 hour

Bake 400 for 20 min
Cut hole in foil and lay over crust area
Bake 375 for 35 min

Let cool for 2 hours and serve

Veggie Egg Bake


Veggie Egg Bake

 9x13 glass pan - 350 45 min

9 eggs (fresh eggs from friends chickens)
1 1/2 cups milk
1 cup fage 5% greek yogurt
2 tbs flour
1 tsp Gus' garlic cheese dip (or one clove fresh minced garlic)
Salt and fresh crushed black pepper to taste
Wisk all above ingredients in the 9x13 glass pan

3 pieces bread crust off - diced up in small pieces
1/2 cup frozen chopped spinach thawed and drained
1 cup chopped broccoli
Mix ingredients into egg mixture

1 1/2 cups shredded cheddar cheese
Sprinkle cheese on top and mix in a little

Bake uncovered 45 min at 350

Cilantro Pesto

 

2 cups fresh cilantro
1/2 cup almonds
2 cloves garlic (or 1)
1/2 cup fresh grated romano cheese (or parmesan) 
3 tbs avocado oil
2 tsp water
1 squeezed lemon
1 tsp salt
pepper

I put all in Ninja blender and mixed. 


For a dip I mixed greek yogurt, sriracha, and pesto. Perfect with tortilla chips and even better with a salmon burger or any fish.

Dutch Honeycrisp Apple Pie

1 store bought Walnut pie crust

Pie Filling

7 honeycrisp apples (5 cups?)

1 tsp vanilla

1/2 cup sugar

1/4 cup packed brown sugar

3 Tablespoons of flour

1 teaspoon cinnamon

1/3 teaspoon nutmeg


Mix all together in bowl then put in pie crust


Dutch crumble

4 full graham crackers crumbled 

1/4 cup Sugar

1/4 cup Honey

3 tbs melted coconut oil 

Mix together in bowl and place on top of pie filling


Bake 375 45 min


Melt 6 caramels and drizzle on top 

Serve warm with vanilla bean ice cream

Oats and dates friendship bread

1 1/2 cups friendship bread mix
2 eggs
2 tbs avocado oil
1 pouch applesauce (1/4 cup)
2 tsp vanilla
1 tsp baking soda
1 tsp baking powder
1 tbs cinnamon
3/4 tsp salt
1 tbs molasses
1/4 cup honey
2 tbs maple syrup
4 Medjool dates cut up
1/2 cup bananas mushed up
****3/4 cup brown sugar
(My suggestion for next time. Add another egg and not use brown sugar. It was very sweet)

Mix all together
Add
2 cups oats
1 cup flour
1/4 cup butterscotch chips

Bake in two dishes - glass pie
350 25 min

Cinnamon Pear Butternut Squash


16 oz of cubed frozen butternut squash (I use a brand from Costco) - really it doesn't matter if it's cubed, fresh, frozen
Large drizzle of Fustini's Garlic Olive Oil
1 tsp of Italian seasoning (I use spice mix from the U.P.)
Salt and Pepper

Bake 400 for 20 min, flip, bake 20 min, broil until crisp
Serve warm 


Cornbread with a twist

Ingredients:

1 pkg. “JIFFY” Corn Muffin Mix 
1 egg 
1/2 can of cream corn no salt added 
1/2 cup shredded cheddar cheese 
1 eye dropper of Fustini's White Truffle oil

Directions:

Preheat oven to 400°F.
Mix ingredients, Use a bread tin and spray with oil.
Bake 20 minutes or until golden brown.

Womlets (omelette in waffle)

Womlets - omelette filling in a waffle

Waffle mix
Milk
Vanilla
Oil
2 eggs
Bacon
Shredded Cheddar Cheese

Mix waffle mix, milk vanilla, and oil.
Cook 2 eggs and scramble them.
Mix into waffle mix, scrambled eggs, cheese, and bacon.
Use the waffle maker to make waffles.

Options: add spinach, Italian seasoning, or cayenne powder.

Grammy's Key Lime Pie

Grammy's Key Lime Pie - Mucky Duck

7 tbs key lime juice
1 can condensed milk
Beat 3 egg whites until stiff
Pour mixture into graham cracker crust
Spread cool whip on top.
Cover with foil and freeze


Grammy's Granola

Grammy's Granola

4 cups oats
1 1/2 cups ground nuts
1 1/2 cups coconut
1 cup wheat germ
1/2 cup sesame seeds
1/2 sunflower seeds
1/2 cup flour

Mix together dry ingredients

3/4 cup crisco oil
3/4 cup honey
1 tbs vanilla

Heat three wet ingredients

Mix both together and place on baking sheet bake at 350 for 10 min stir 10 more minutes


Grammy's Lemon Pudding

Grammy's Lemon Pudding

1 can crushed pineapple  (13.5 oz)
1 package of lemon jello cook and serve pie filling (3.5)
3/4 cup sugar
1 egg
2 cups prepared dream whip
1/4 cup grapes
1 small banana diced

Drain pineapple very good - use hands
Measure pineapple juice and add water to make 2 1/4 cups
Combine pudding and sugar and 1/4 cup liquid in sauce pan
Add egg - blend
Stir in remaining liquid
Stir over medium heat until full boil
Turn off and chill in refrigerator
Whip dream whip and mix together.
Stir in grapes and bananas 

Twirly Whirly Pizza

Twirly Whirly Pizza

1 tube refrigerated pizza dough
1 cup pizza sauce
1 package shredded mozzarella cheese 
1 cup frozen spinach, thawed and drained of moisture 
Italian herb seasoning

Heat oven 400. 

Unroll dough from tube onto a cookie sheet. Spread pizza sauce on top. Sprinkle with the cheese and top with spinach. Sprinkle with any kind of extra herbs or spice. 

Roll up, starting with the short end. 

Cut into 8 pieces, then lay pieces flat in a greased pie tin. I used Fustini's Garlic Olive Oil for extra flavor.

Bake in oven for 25 minutes
Then toss some grated cheese or spice on top

Black Bean Burgers

Black Bean Burgers
1 1/4 can black beans - smashed
1/2 cup corn
2 garlic cloves minced
1 jalepeno minced
1/2 lime squeezed
1 egg
Salt and Pepper
1/2 to 3/4 cup bread crumbs - plain
Flavor suggestions - Aji Verde Oil, red pepper flakes, curry, fresh oregano

Mix egg, lime, garlic, salt, pepper, oil, then add rest.
Split into 4 patties and cook on stove.

Serve with pretzel buns, white cheddar cheese, avocado, lettuce, and tomato 

Tiramisu

Tiramisu
1 cup Mascarpone
1/2 cup cream cheese
1/2 cup yogurt
1/2 heavy cream
1 cup cool whip
3/4 cup chocolate chips
1 cup strong coffee
1 cup Kahlua
1/2 cup sugar 
Cocoa powder and powdered sugar for decoration
30 ladyfingers

Mix coffee and Kahlua - chill
Melt chocolate with 1/2 cup cream over low heat
Whip 1/2 cup cream until stiff with mixer
Use single whip on low speed and whip mascarpone with sugar, cream cheese, and yogurt
Fold whipped cream with cheese

Layer lady fingers, 1/3 expresso, 1/3 chocolate, 1/3 mascarpone, and repeat and end with mascarpone on top. Decorate with cocoa powder and powdered sugar.

Every Kentucky Derby we celebrate while watching the event on TV and eating Derby Pie!

4 eggs
1/4 cup maple syrup
1/4 cup bourbon whiskey
2 tsp vanilla extract
1/2 cup all-purpose flour
3/4 cup white sugar
3/4 cup packed brown sugar
1 1/2 cups chopped toasted pecans
1 1/2 cup semisweet chocolate chips
1/2 tsp salt
1 graham cracker pie crust

Beat eggs until foamy, add syrup, whiskey, and vanilla.
Beat flour, both sugars into egg mix until smooth.
Stir in pecans and chocolate.
Pour into pie crust. Be sure not to overfill. I usually have extra
Bake at 325 for 55-60 minutes.

Bab's Perfect Southern Hash Brown Casserole

Bab's Perfect Southern Hash Brown Casserole

2 cans create of potato, undiluted
8oz sour cream
1/2 tsp garlic salt
1 pkg (2 lbs) frozen hash browns
2 cups shredded cheddar
1/2 cup grated Parmesan

Combine soup, sour cream, and garlic salt. Add potatoes and cheese mix well.
Pour into greased 9x13 pan. 
Top with parmesan. 
Bake uncovered at 350 for 55-60 minutes (I like to cook for 90 min and broil the top at last minute)




Costa's Famous Soup Slop

Costa's Famous Soup Slop
I make a large batch and store in separate containers that hold 1 week's worth of soup for the school week. I freeze these. I usually make 10-12 weeks worth at a time. On Sat. morning I take out a frozen container and thaw until Sunday morning and place into 5 separate containers to take to school.

To prepare I find fresh peppers and asparagus on sale and cut up into small pieces and freeze.

2 cans of coconut milk
1/4 cup coconut oil
5 bunches of asparagus cut into small pieces
10 red, orange, and yellow peppers cut into small pieces
1 bag of frozen kale
1 bag of frozen spinach
1 cup of frozen corn
6 large carrots peeled and cut into small pieces
4 butternut squash cooked 
3 tbs of ground turmeric
Fresh ginger grated (choose your amount, I like a lot)
Spices - I use something different every time

Put all above into a huge pot, fill water to near top of veggies cook for a few hours. Add all the beans halfway through.

1 bag of lentil beans cooked in crockpot prior
2 cans of black beans drained
2 cans of kidney beans drained
2 cans of northern beans drained

Let it cool before putting into storage containers.

2 eggs
2 applesauce pouches   
3/4 cup sourdough starter 
1 tsp vanilla extract
½ tsp almond extract
2 tbs molasses
2 tbs cinnamon
3 cups whole oats
1/2 cup flour (Krustez pancake mix)
3/4 cup hemp seed
3 cups blueberries (I use frozen I picked in South Haven)

New version (less fat and sugar)
2 1/2  cups whole oats
1 cup flour (Krustez pancake mix)
½ cup hemp seed
1 tsp baking soda
½ cup maple syrup I tapped from trees
2 tbs cinnamon
1 or 2 eggs
2 applesauce pouches     
1 tsp vanilla extract
½ tsp almond extract
1/2 cup nut butter
1/2 cup milk
3 dates cut in small pieces


Old version:
2 ¼  cups whole oats
1 cup flour (Krustez pancake mix)
½ cup chia seed   **** see below
1 tsp baking soda
½ tsp salt   (I did not add this in)
½ cup honey
½ cup coconut unsweetened
1 or 2 eggs
½ cup mixed coconut oil and applesauce        (portions --- ⅓ oil, ⅔ applesauce)
1 tsp vanilla extract
½ tsp almond extract
Mini chocolate chips OR butterscotch chips      (added about a ½ cup)
3 dates cut in small pieces


Preheat oven 350 degrees
Mix dry ingredients
Add wet ingredients 
Mix with spoon, flatten into pan
Bake 20 min

Crab Cakes

Crab Cakes

2 eggs
2 tbs greek yogurt
1 tsp mustard
1/2 tsp ground mustard
1 1/2 tsp Worcestershire sauce
1 tbs Old Bay Seasoning
1/4 tsp salt
1 lb crab
1/2 cup panko
Oil for pan (my suggestion is to use Fustini's Meyer Lemon Olive Oil)

Mix all ingredients together except crab, panko crumbs and oil. Then gently mix in crab and panko crumbs.

Heat pan, form into patties and cook until done. 

Serve with a splash of lemon oil or a squirt of fresh lemon juice

Turkey Pot Pie

Cut up turkey into pieces
1 bag mixed veggies
2 pie crusts (Pillsbury, warm on counter)
1 can cream of potato soup
1/2 cup Greek yogurt 5% Fage 
Black pepper
Old Bay
Lawery's seasoning

Mix all and put in crust
Bake 35 min at 425
Cover crust edge with foil

Sprinkle turmeric on top and aji verde olive oil

Beet Hummus

Beet Hummus

1 can cannellini beans (rinsed and drained)
1 tsp mustard
1 can beets (rinsed and drained)
2 tsp fresh squeezed lemon juice
1 garlic clove

Put all ingredients in a food processor (I use a Magic Bullet) and combine until smooth. Chill in refrigerator serve with cucumber or crackers.

Easy Peanut Butter Cookies

Peanut Butter Cookies



1 cup peanut butter
1 cup sugar
1 tbs coconut oil
1 egg
1 tsp vanilla
1 tbs honey
1/2 tsp baking soda
1/2 tsp baking powder
1/3 cup Gold Flour

Mix all together and bake at 350 for 10 minutes. Turn off oven. Leave in 10 more minutes. Take out and serve.

No Yeast Simple Bread

No yeast bread


2 cups Gold flour
1/2 tsp salt
4 tsp sugar
3 1/2 tsp baking powder
1 egg
1/2 cup milk & 2 tsp
2 tbs olive oil  (want more flavor, use Fustini's Garlic Olive Oil)

Mix together then flatten bread to 1 1/2 inches thick and put on oil sprayed pizza pan. Preheat oven 375 degrees. Spray oil on top and sprinkle with sea salt. Flip bread over and spray with oil and sprinkle with sea salt. 
Bake 25 min

** in a toaster oven, bake for 20 min at 350 without preheating.

I like to serve the bread and dip it in Oregano vinegar mixed with Bacon oil

Hawaiian Sweet Muffin



It's starting to get cold in Michigan after having record breaking warm weather in the first few days of November. So I decided to make something that reminds me of being on a warm beach surrounded by palm trees!

Ingredients:
1 1/4 cup pancake mix
2 eggs
1tsp almond extract
1/4 cup brown sugar
1/4 cup chopped fresh pineapple
1/4 cup chopped coconut
2 tbs white sugar
coconut oil to grease pan
honey to drizzle on top
Muffin top pan

Preheat oven 375.
Mix pancake mix, eggs, almond extract, and brown sugar together.
Mix pineapple and coconut together.
Grease 6 areas of the muffin top pan and dust white sugar over to cover each muffin top area.
Place the pancake mix in pan and top with pineapple mix. Drizzle with honey.
Bake in oven for 12 minutes.
Serve warm and drizzle a little more honey on top if you want!
Serves 3 eating 2 each.

Spicy Smoked Bacon Spinach

Spicy smoked bacon spinach


1 bunch spinach
3 strips of bacon cooked and chopped 
1 tbs bacon oil
1 tsp cayenne oil
1/4 tsp crushed red pepper
1/4 tsp dipping spices
Shake of salt
Shake of pepper
1 jalapeno pepper diced 
3 garlic cloves
10 cherry tomatoes chopped 

Place all but spinach, bacon, tomatoes in pan on med high heat for a few minutes until the spices and oil heat up. Then add three other items and cook until the spinach wilts.  Serve immediately. Serves 4 side dish portions

Overnight Baked Oatmeal


Overnight Baked Oatmeal 
(Apple cinnamon with pecans and butterscotch)

4 apples - peeled, cored, and diced
1 tbs coconut oil
1 tbs butter
2 tbs water
1 tbs cinnamon

Mix all together in pan. Cook over medium heat for 10 minutes or until apples are soft.

2 1/2 cups oats
1 tsp baking soda
1 tsp salt
1/2 tsp cinnamon
1 tbs Fustini's Blood Orange Olive Oil
1/3 cup chopped pecans
1/3 cup butterscotch chips
1/4 cup honey

Mix all together in a bowl. When apple mixture is complete, pour into bowl and mix together. Set aside.

2 eggs
2 cups milk
1/2 tsp almond extract

Mix in bowl.

8 x 14 inch pan spray with olive oil. Place oat and apple mixture evenly in the pan. Pour milk mix over the top evenly. Use a fork to be sure the milk mixture worked into the oat mixture.

Bake 375 for 25 minutes.
Add 3/4 cup brown sugar and 1/3 cup pecans on top. Bake for another 5-10 minutes.

Parmesan Cilantro Corn

Parmesan Cilantro Corn

5 ears of corn, cooked, and cut off the cob
2 tbs cilantro chopped
1.5 cups Greek yogurt
1 cup real Parmesan shredded
1 tsp Fustini's Lime Olive Oil    OR    1/2 lime squeezed
Dash of Cayenne (to your spice liking)
Dash of salt and pepper

Mix all ingredients together. Cook in microwave for 50 seconds. Stir and serve.

Fresh Tart Cherry Danish

This year was the first year we got cherries on our trees in our backyard here in Michigan. My 8 year old and I picked them and then I decided to make something sweet!

1 cup tart cherries pitted (I picked them from my tart cherry trees)
1 tsp Blood Orange Fustini Olive Oil
1 can crescent rolls
1/2 tsp vanilla
1/2 cup powdered sugar
1 tbs honey
Whipped cream

Use a muffin pan. Preheat oven 375. Spread a little oil on the bottom of each muffin tin. Spread a crescent roll out in each muffin area. Mix cherries vanilla, and sugar together. and spread inside the crescent roll. Then wrap the ends over top of cherries. Bake in oven 10 minutes or until tops brown slightly.
Plate and then drizzle honey on top. Add small amount of whipped cream. Serve warm.

Serves 8
