Quinoa Salsa

Quinoa Salsa
1 cup Quinoa, cooked according to directions on bag
1 can black beans rinsed
1 red pepper chopped
1 cup cilantro chopped
1/4 cup green onion chopped
1 cup tomatoes chopped
2 garlic cloves diced
1 lime (juice)
1 cup corn
1 avocado
1 tbs Fustini's chipotle olive oil (or olive oil and dash of cayenne powder)
1 tbs Fustini's lemon olive oil (or olive oil)
2 tbs Fustini's pineapple vinegar (or 1 tbs sugar)

Mix all together and cool in the refrigerator covered until ready to serve. 
Serve with tortilla chips. I used black bean garlic tortilla chips.
