Easy Farro with feta and avocado salad
While shopping at Costco (I love that store) I came across Farro. It's similar to Quinoa because it's a grain that is great for you. I have found that quinoa and other seed/grain type foods are so expensive at other stores but I can get a huge bag for a good deal at Costco. Anyway, I decided to give it a try tonight. And I like it!
Prep and Cook time: 15 min total
Ingredients:
1 cup farro
4 oz feta cheese
1 tomato chopped
1 avocado sliced
basil
olive oil (I used basil olive oil)
Makes 4 servings
Cook the farro as directed (3 cups water for 1 cup farro) over stove boiling for 15 min. While that is boiling prepare the rest. Lay out the farro, feta, tomato, and avocado on the plate. Drizzle olive oil over the meal and sprinkle a little basil on top for color and taste.
Purchased from Costco but you can get it at any grocery store near the rice section.
