Honey Asparagus Chicken Stir-Fry
2 chicken breasts, cubed
1 cup brown rice
1 tsp garlic oil, I use Fustini's Garlic Olive Oil
3 garlic cloves, smashed and diced
1 tbs soy sauce
1 bunch asparagus, cut into 1 inch pieces
1 tsp lemon olive oil, I use Fustinit's Meyer Lemon Olive Oil
1/2 lemon
1/4 cup honey
3 tbs soy sauce
1 tbs Fustini's Serrano honey balsamic vinegar (if you don't have it leave it out and don't add a normal balsamic vinegar)
Makes 2-3 servings
In hot pan place garlic and garlic oil until hot and add chicken already diced. Drizzle 1 tbs of soy sauce in pan. Cook chicken through (about 20 minutes).
In another hot pan place lemon olive oil until hot and asparagus. Squeeze lemon juice and cook about 5 minutes so that the asparagus is still crunchy. Take off heat until chicken is done.
Cook the rice as directed on box.
In a bowl mix the honey, 3 tbs soy sauce, and balsamic vinegar together.
Add the asparagus to the chicken and add 3/4 of the sauce mixture. Cook for just a minute to mix all the ingredients together.
Place the rice and the chicken mix on top.
Use the rest of the sauce to drizzle on top and serve.
