Butternut Squash, Kale and Rice Soup
What to do with butternut squash and mango? Make soup.....
1 cup diced mango
2 cups diced butternut squash
1 tbs coconut oil
4 garlic cloves, smashed and diced
1 cup chopped onion
1 bunch kale, chopped
All in a pot on the stove at medium high heat. Stir until tender but don't let it burn.
Add
1 1/2 cups of uncooked brown rice
4 cup water
1 tbs oregano
1 tsp salt
Cook covered over low heat for 1 hour.
