Fresh Cilantro and Gouda cheese Quinoa Salad

Fresh Cilantro and Gouda cheese Quinoa Salad


2 cups cooked Quinoa
1/4 cup chopped Cilantro
1/2 cup chopped Gouda goat cheese (from Costco) or use any kind of cheese
1/4 cup Crushed pistachios
1/2 chopped thin Cucumber
2 Roma Tomatoes chopped
1 Ripe Avocado cut up
1 tbs Chipotle Olive oil (or olive oil)
Sprinkle of Crushed red pepper flakes if you like a little heat


Mix quinoa, cheese, and oil together and warm in microwave so cheese melts a little then stir it up. Add everything else together and sprinkle the red pepper flakes on top.
