Sun dried Tomato and Spinach Macaroni Muffin
2 tsp olive oil
1/2 cup mozzarella cheese shredded
1 sleeve Ritz crackers crushed
Mix three ingredients together and fill 12 muffin tins after spraying with olive oil
Chop up sun dried tomatoes and place on top of cracker mix
Stir together the following:
1/2 cup milk
3 eggs
1/2 tsp Lawry's seasoning salt
3 eggs
1/2 tsp Lawry's seasoning salt
1 tbs crushed red pepper flakes (if you like spice--speeds up metabolism)
Mix:
3 cups of cooked noodles (I use wheat noodles with protein)
2 cups of shredded Cheddar cheese

2 cups of shredded Cheddar cheese
Pour egg mix over noodles and stir together
Divide up mixture and place in muffin tins (if there is extra cook it separately)
Place chopped spinach on top of each
Cook in oven at 350 for 30 minutes
