Open-face sweet potato Dijon tuna burger
Makes 4 burgers
1 can tuna
1/4 cup flax seed powder
1/2 cup farro
3/4 can garbanzo beans
1 sweet potato
3 tbs coconut milk
1 tsp maple syrup
crushed red pepper flakes to taste - if you like spice
Tabasco sauce to taste - if you like spice
Bake the sweet potato and scrap out the potato and place in blender with all ingredients listed above. Form into patties and add some bread crumbs to firm up the burgers a bit. Spray pan with olive oil or coconut oil and cook on stove until inside is warm and outside crisps up a little.
Serve on a wheat bun or wheat bread. Place avocado on top and drizzle with Dijon mustard.
