Red, White, and Blue.....Salmon salad with Honey Ginger Dressing
Honey Ginger Dressing:
1/2 tsp Ginger, grated
1/2 Lime, squeezed
1 TBS Honey
1/2 container Yogurt (Fage) - about 3-4 oz.

Take out half the yogurt in the container and eat it or store it for later. Add honey, lime juice, ginger and stir. Set dressing aside and create the salad. 

Salad:
2 pieces of salmon
1/4 cucumber, chopped
1/2 avocado, cut in chunks
1/2 cup black beans drained
2 plates of lettuce, I used red romaine
1/4 cup leeks, diced
1 tbs pineapple vinegar (or other vinegar)
Squeeze of lime juice 
Small amount of grated ginger
Strawberries cup up
Blueberries

Grill salmon on grill squeeze some lime juice and put some grated ginger on the salmon while cooking. Saute the leeks in vinegar over stove. Prepare the lettuce on two separate plates. Add cucumber, avocado, and black beans to lettuce and toss together. Add the leeks after cooling somewhat. Place salmon on top of the lettuce and add blueberries and strawberries around the salmon. Drizzle the honey ginger dressing on top.
