Quinoa nachos RED, WHITE, and BLUE
1/2 cup Quinoa, cooked (will turn into 1 1/2 cups or so to use)1 can Black beans, rinsed
1 can White corn, rinsed
1 Red pepper, chopped
1 Leeks, diced (1/4 cup)
2 Tomatoes, chopped
4 oz White cheese (I used shiitake mushroom leek cheese), cubed and melted
A few sprigs of Cilantro
1 bag Blue tortilla chips
3 breasts of Chicken, cooked and diced
Red pepper flakes, if you like a little heat
Garlic salt
Olive oil
Cook quinoa, serve on the side of dish. Cook chicken and dice up. Cook chicken over medium heat with a little olive oil and garlic salt on stove. Place chicken in bowl. Use same pan to cook tomatoes, red pepper, and leeks with a little olive oil on medium heat. Add drained corn in at the end just to heat. Warm black beans in microwave. Place tortilla chips on plate. Place black beans on top of chips. Place quinoa on center of plate. Place tomato mixture on top of quinoa. Melt cheese so it's gooey. Drizzle cheese on top of all food. Sprinkle red pepper flakes.
