Stuffed Peppers

Stuffed Peppers
Ingredients:
1/2 lb ground buffalo
2 peppers
1/2 cup farro cooked (or rice or quinoa)
1/2 cup tomatoes diced
1/4 cup salsa
1/3 cup shredded pepper jack cheese (or cheese of your choice)
Cumin to taste
Tabasco sauce to taste
Cook meat in pan and add tomatoes, salsa, Tabasco, and cumin until it's not runny. Add farro just to mix together. Stuff the peppers with the mix. Top with cheese. Cook in oven for 30 minutes at 375.
