Pumpkin Muffin with Frosting

Moist Pumpkin Muffin with Sweet Frosting
This is the most moist muffin I have ever made. No oil or butter either!
1 Jiffy Bran with dates 7 oz box mix
1 Jiffy Golden cake 9 oz box mix
1/2 cup coconut milk
2 eggs
1 1/2 cup pumpkin ( I used thawed real pumpkin that I froze after Halloween) in the can will work too
1 tsp cinnamon
1/4 cup flaxseed powder
1 tbs blackstrap molasses

Preheat oven 350. Mix all ingredients. Spray muffin cups with olive oil. Divide batter into cups. I used extra large and filled 16. Normal size fills 24 or so. Bake for 35 minutes (extra large) 25 min normal size muffins

Frosting
3 tbs fresh pineapple juice
1 cup powedered sugar
2 tbs blackstrap molasses
2 tsp cinnamon

Mix together and frost after muffins cool. This made enough to frost 16 large muffins.
