2 cups shredded zucchini (I peeled the skins off so jam not green)
1 cup sugar
1/4 cup fresh squeezed lemon juice
1/3 box Jell-O - cherry (can do any flavor)
Pot over medium heat mix zucchini, sugar and lemon - bring to simmer
Reduce heat to medium low and cook 20 min until reduced
Stir in Jell-O until fully dissolved
Remove from head and let cool
Transfer into jars
Completely cool
Store in fridge for 1 month or freezer 1 year
