Chocolate Ganache Cake

Melt in Your Mouth Chocolate Ganache Cake

These are for the serious chocolate lover! A few months ago I took my sister-in-law to Simply Good Kitchen where a couple cooks for a group of people, provides the recipes, and gives us tips and tricks. I loved it! It lasted about 3 hours and was an awesome experience for a foodie like me! So I finally got an opportunity to make the dessert that was so good! Yesterday we had neighbors over for the Kentucky Derby and this was one of the desserts I made. Thanks to Simply Good it was amazing!

Servings 12
Ingredients:
2 cups heavy whipping cream
3 cups semi-sweet chocolate chips
4 eggs
3 tbs sugar
6 tbs cocoa powder
1 tbs vanilla
1 tsp salt
12 3 oz ramekins


Directions:
Place the cream in a sauce pot and bring to a boil.
Place the chocolate in a bowl. Pour the hot cream over the chocolate 1/3 at a time mixing it constantly with a spoon until all chocolate has melted. This is the ganache.

In a large bowl place 2 cups of warm chocolate ganache and set aside.

In a shallow dish chill the remaining ganache. Once the ganache has chilled and set, make 12 balls to place in the ramekins after the cake batter is in it.

Now add the egg yokes into the large bowl with chocolate ganach, the cocoa poweder, vanilla, and salt and stir it.

In a separate bowl whisk the egg whites and sugar to form medium stiff peaks. Fold 1/3rd of the egg whites into the chocolate ganache mixture at a time. This is your cake batter.

Divide up the batter into 12 ramekins and place a ball of ganache in the center of each. ***cakes can be assembled 3 days in advance before baking. They will need to cook for 22 min if cold.

Place in preheated oven at 375 for 15 minutes.
