Easy Crock-pot Chicken and Beans with Salsa and Cheese
Servings 7 or 8
Two separate crock pot prep times
Ingredients:
4 large chicken breasts, frozen (fresh is okay too)
1 package 8oz Jalapeno Shredded Cheese
16 oz bag of dried mixed beans (like the picture below)
8 oz fresh salsa
1 avocado
1 oz Greek yogurt per serving
Directions:
Before bed, place bag of mixed beans in crock-pot with 5 cups of water on low.
In the morning, take the beans out, rinse them in a colander, put in container in refrigerator.
Place chicken in crock-pot and cook on low all day.
1 hour before eating, strain the fat out of crock-pot, use large fork to break up the chicken, dump the beans and the salsa in the crock-pot and mix up.
5 minutes before serving add in cheese and mix up.
Plate mixture and add dollop of Greek yogurt and 1/8th of avocado.
