Sweet Beet and Kale Side Dish
1 beet, chopped
1/4 yellow squash, chopped1 bunch green onion, diced1/2 cup chopped kale1/2 tsp spices1 tbs wild mushroom and sage olive oil
1/4 cup red wine
1 garlic cloves, smashed and diced
Water as needed (I probably used 2 cups during the whole process)
1 tsp maple syrup
2 tbs balsamic vinegar
Add all ingredients except maple syrup and vinegar to pan on medium heat covered. At this point I added 1/2 cup water. Every five minutes stir it and add water if needed to cook. After 20 min. add maple syrup and vinegar and keep uncovered and be sure to make sure it doesn't burn. It's done when veggies are soft. Serve immediately.
