Healthy Turkey Quinoa Slow cooker Stew
Ingredients:
1/2 cup lentils(uncooked)
1 cup quinoa (uncooked)
2 cups frozen chopped spinach
1 lb turkey (I used already cooked frozen turkey from Thanksgiving!!)
4 cups water
1 can V8 juice low sodium 12 oz
1 chopped red,orange, or yellow bell pepper
2 white potatoes chopped
1 jalapeno pepper diced
1 bunch of scallions diced
1/4 cup fresh parsley or 1 cubes frozen ready to use parsley
1/4 cup fresh basil or 3 cubes frozen ready to use basil
2 tsp cumin
Put all ingredients in slow cooker in the morning and it's ready to eat for dinner!
