Healthy Basil Cheddar Muffins

 Healthy Sweet Basil Cheddar Muffins
Sweet and cheesy......

Makes 20 - 24 muffins
Ingredients:
3 eggs
Mix the 3 eggs with a hand mixer for 5 minutes to get fluffy
1 cup pumpkin (I used fresh pureed pumpkin)
3 oz applesauce
2 tbs olive oil
1/3 cup cottage cheese
3 tbs maple syrup
Mix all ingredients above

1 1/2 tsp baking powder
2 1/4 cups flour
Add in these two ingredients and mix. Pour into muffin cups after spraying with olive oil.  

5 oz grated cheddar cheese
2 tsp basil flakes
1 tbs Lawry's seasoning salt
Mix the three ingredients above and then sprinkle on top of the muffins before baking.
Bake in oven at 375 for 17 minutes

*I used a frosting bag with decorator to make them a little more exciting!
