So I decided to find some fennel and puff pastry and made an amazing and tasty appetizer.
Ingredients:
1 fennel bulb
2 tsp Tarragon Olive Oil (or olive oil)
3 oz gouda cheese, grated
2 oz mascarpone cheese
2 tsp fresh oregano, diced
1/2 tsp red pepper flakes
1 lemon, zest
1 tsp Lemon Olive Oil ( or don't use)
3 sections puff pastry, cut into 2" x 5" pieces (total 6 pieces)
salt and pepper to taste
Preheat ove 400. Slice fennel heads as season with salt and pepper. In a pan on stove (heated up) spread Tarragon oil in pan and place fennel slices in. Flip and spread a little more oil. Sautee for 5 mins or until charred and softened. In a bowl mix gouda, mascarpone, oregano, red pepper flakes, lemon zest. Place puff pastry on cookie sheet with a little oil spray and spread 1/6 of mix on each puff pastry. Drizzle lemon olive oil on top of the mix. Place grilled fennel on top.
Place in oven for 15 minutes or until fennel caramelizes and puff pastry turns golden brown. Serve immediately.
