Cauliflower Veggie, and Egg Stir Fry
 
Who knew cauliflower could taste this good!!! Gluten free and tasty!

1 head of cauliflower, diced
1 cup pea pods, diced
1 cup carrots, shredded
1 garlic clove, diced
1/2 tsp garlic salt
2 tsp Fustini's Basil Olive Oil (or olive oil) 
3 eggs, scrambled
3 tbs soy sauce

In small pan, scramble eggs and put to side.
In large pan, heat garlic and oil then add veggies, cook for 10 minutes covered, add egg and soy sauce. Stir ever few minutes. Cover for another 10 minutes. Serve immediately.
Next time I make this, I will top it with large cooked shrimp.
Serves 2 as a meal, 3-4 with something else.
