Crock-pot Chicken and Kale with Shaved Parmesan
I love to make quinoa ahead of time for a week or so and use it when needed. It's a great source of protein and great to use as the grain/starch in a dish. With that pre-made this dish is so easy to make. Toss chicken in a crock pot all day!

Ingredients:
4 chicken breasts, frozen and uncooked (can be fresh too)
3 tbs Fustini's Meyer Lemon Olive Oil
3 cups chopped frozen kale (can be fresh too just chop it up before using)
2 cups cooked quinoa
1 cup shaved Parmesan cheese
1 tsp garlic salt
3 tbs Fustini's Garlic Olive Oil
1 tsp crushed red pepper flakes

Toss frozen chicken and lemon oil in crock pot for 10(or what ever) hours on low. 1 hour before serving add frozen kale to crock pot and mix it into the chicken to break up the chicken.

Cook the quinoa if you don't have it cooked already by following the directions on the package. If already cooked, heat a pan on the stove medium/high heat. Add garlic oil, pepper flakes, and garlic salt until hot. Add quinoa to spice and oil. Stir together until all mixed in.

Plate hot quinoa then top with chicken mix and add shaved Parmesan on top.

Serves 4
