High Protein, Iron and Fiber Oatmeal Bars

I bought the hemp seed and Chia seed from Costco because it's so much cheaper there. Hemp seed is high in protein and Chia seed is high in fiber. Blackstrap molasses is high in iron much more than regular molasses. I was given a recipe from a friend and have made changes to it three times. I finally decided on this as my final product. Perfect for that 2 pm time of the day when I am ready for a snack that is easy to eat, filling, and will give me energy until dinner.

3 1/2 cups oats
1/2 cup hemp seed
1/4 cup Chia seed
3/4 cup flour
1/2 tsp salt
1/2 cup honey
2 eggs
1/3 cup coconut oil
3 oz applesauce
1 1/2 tsp almond extract
1/4 cup blackstrap molasses
1/3 cup semi-sweet or dark chocolate small chocolate chips (more if you want!)

Preheat oven to 350 degrees. Spray 12x17 jelly roll pan with olive oil. Mix dry ingredients. Add wet ingredients and mix completely with spoon. Flatten into the pan and bake 20-25 minutes.
