Chicken Roll-Ups

Chicken Roll-Ups

This is the one and only recipe in which I never make a change. They are so good just the way they were when I started making them 10 years ago. I make a very large batch and freeze them in groups so I have them for a quick home made meal. Yesterday I made them and now have 6 meals frozen ready to pop in the oven.

7 chicken breasts, chopped into small pieces
3 bricks of cream cheese, softened ( I used low fat but I don't suggest no fat)
1 bag 16 oz chopped frozen spinach, thawed and drained
5 tubes of crescent rolls
4 tsp Lawry's seasoning salt
5 tbs or so of olive oil
1 cup or so of bread crumbs
Foil and Zip lock bags

This makes 40 roll-ups. In my family we eat 2 or 3 per adult so this can make 5 or so meals to freeze for later.I place the frozen chicken rollups on a cookie sheet to bake at 375 for 30 minutes. If they are not frozen cook at 375 for 15 minutes or until browned.

First, cook the small pieces of chicken in a pan or two on the stove until cooked through. Let the chicken cool off a little before putting in the bowl.
Second, mix all the ingredients together in a big bowl except the olive oil and breadcrumbs.

Third, layout the crescent rolls so they are flat and separated like the picture below in the left half. Roll the crescent roll over the mixture like the right side of the picture.
Now pick up the wrapped crescent roll and manipulate it using your hands so that all the mixture is inside and it looks like a ball. See the picture below.
 Have a plate of olive oil and a plate of bread crumbs ready. The picture below shows an example of everything at this point. First spread a thin layer of olive oil on the crescent ball (I just use my fingers to spread it). Now use your other hand to roll the ball in bread crumbs until it's fully coated.



This picture below is what the finished product looks like. Now wrap in groups of 8 or whatever will feed your family (2 or 3 per person) in foil. Then place in a gallon sized Ziplock bag. Freeze until ready to bake and eat.
