Harvest Grains Blend Cakes with Pork Tenderloin

Trader Joe's Harvest Grains Blend is so good. I decided to use my left overs of pork tenderloin and make a patty, topped it with cheese and it was delicious!

1 shallot, diced
8 baby carrots, diced
1 garlic clove, smashed and diced
1/2 red bell pepper, diced
1 lemon, squeezed
1 tablespoon Fustini's Meyer Lemon olive oil
2 cups Harvest Grains Blend, cooked  (if you don't have a Trader Joe's use another grain like quinoa or rice.
1 cup finely chopped pork tenderloin, cooked

2 eggs, lightly beaten
1/3 cup bread crumbs 
1 tsp oregano flakes
8 pieces of smoked Gouda cheese


Directions:
Cook shallot, carrots, garlic, pepper, lemon with lemon oil in a pan over moderate heat, stirring, until carrot is softened, about 8 minutes. 

Cook Harvest Grains Blend (or quinoa/rice/farro) as directed on box/bag.

Stir together grains, eggs, bread crumbs, pork tenderloin, and vegetable mixture in a bowl. Form into patties, pressing mixture so cakes will hold together. Cook  patties using same pan used for the veggies over moderately high heat in a little olive oil, gently turning over once, until browned.

Plate and serve with smoked Gouda cheese on top and a little oregano flakes.
