Butternut Squash Sweet Chicken with Walnuts and Feta
While shopping at Costco today I saw diced up butternut squash and decided I should make something out of that for dinner tonight......... So I did!! The big question when I got home was what to add to it as the base? Chicken was my answer for tonight.
Ingredients:
2-3 chicken breasts
1 lb butternut squash cubed
2 cloves garlic diced
1/2 cup broken up walnuts
1 tsp sage
olive oil
water
feta cheese
pure maple syrup
**quinoa
Cut up chicken in cubes and cook on stove with a little water and a diced up garlic clove. At the same time cook the squash in a different pan with a splash of water and a splash of olive oil. Add one garilc clove diced up. 15 minutes and they should both be cooked. Let the squash crisp up a little on the edges. Add chicken to the squash and put in the walnuts. Add the sage and drizzle a little more olive oil . Place on the plate and sprinkle a little feta on top. Last, drizzle with a small amount of pure maple syrup (this makes the dish so flavorful).
**I added quinoa as the base of the dish to add some more protein and carbs.
