Roasted Red Pepper Enchilada
Sauce:1 jar Roasted Red Peppers
1-4oz can Diced Green Chilies
1/2 can of tomato soup
Filling:3 chicken breasts cut in pieces cooked on stove
1 can black beans
2 garlic cloves
Handful of cilantro
hot red pepper flakes (only if you want it spicy)
6-8 large tortillas
Topping:1 1/2 cup shredded chedder cheese
Directions:
Cook chicken over stove with a little olive oil. Add two garlic cloves and chopped cilantro. If you want it spicy add hot red pepper flakes.
Spoon filling (chicken and black beans) into tortillas. Wrap them up and place filled tortillas in 9x13 baking dish.
Mix roasted red peppers, green chilies, and tomato soup in food processor. Now pour this mix over the wraps. Sprinkle with cheese
Sprinkle with cheese. Bake for 30 minutes at 350 F or until cheese is melted. Enjoy!
