Quick Vegetable Egg Stir-fry
 Every time I read an article about healthy eating I see eggs included. So why not add them into dinners. I don't have time during the week to make eggs for breakfast so dinner makes sense! My first thought when making a dish is vegetables. I use that as my main item and go from there. This is what I came up with.....
Time: 20 minutes
Serves: 3

Ingredients:
3 eggs
3 cups frozen stir-fry vegetables
1 clove garlic
1 tbs olive oil
1/4 cup peanuts
1.5 cups cooked (rice, quinoa, or farro)
**1/2 tsp soy sauce if you want a salty flavor like fried rice.

Cook the eggs and set aside. Use the same pan and put olive oil and stir-fry veggies until cooked to your liking. I like to spend a little extra time to get them browned. Toss in peanuts, cooked (rice, quinoa, or farro) and diced garlic. Mix around for just a minute until you smell the garlic. Add the eggs back in. Serve on a plate and if you want add just a small amount of soy sauce for flavor.
