I love to add flavor to my pancakes. These are blueberry pancakes as made by the box (Fiber One Mix is my favorite). But I used unsweetened almond milk instead of milk and I add 3 eggs instead of 1. I prefer to have more protien than just carbs for my breakfast. Add blueberries and then cook on a griddle.
If you have never tried blueberries and lemon together, now is the time. It's amazing. Instead of cooking the pancakes with olive oil I put lemon olive oil on the griddle. http://www.fustinis.com/store/proddetail.asp?prod=133 It is so good. I also drizzle just a little on top of the pancake when it's on my plate.
What makes these special is the blueberry balsamic vinegar (it's so sweet it doesn't taste like vinegar at all) http://www.fustinis.com/store/proddetail.asp?prod=082008-3 I use this as my syrup!!!
If you don't use the special oil and vinegar just use regular blueberries and squeese a little lemon over the pancakes. Maybe it will taste similar!!??
