Spicy Grilled Cheese with Cornbread and Caramelized Onions


Ingredients
  • 4 slices jalapeno cornbread (see directions below)
  • 1/2 cup black beans, drained
  • 1/2 cup caramelized onions (see directions below)
  • 1/2 cup shredded cheddar cheese
  • 1 tbl butter
  • 1 avocado
Directions
Butter one side of each slice of cornbread and place on pan or grill. Add cheese, black beans, and onions to two slices and top with cheese. When bread is grilled, place on plate and put the sliced avocado on top. Add the other piece of cornbread on top to make a sandwich. Serve



Jalapeno Cornbread

Ingredients:
  • 3/4 cup milk
  • 1/2 cup cream corn
  • 1/4 cup oil
  • 2 eggs
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 2 tablespoons brown sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 jalapeno peppers, seeded and finely diced
Directions
  1. Mix the dry ingredients. Add the wet ingredients.
  2. Pour  into a greased 9x5 inch loaf pan and bake at 375 about 30-40 minutes.


Spicy Caramelized Onions

Ingredients:
  • 1 tbs chipotle olive oil (or olive oil)
  • 1 sweet onion, sliced
  • 1/4 tsp Cayenne powder
  • 1 tbs brown sugar
  • 1 tbs balsamic vinegar
  • 1/2 cup water
Directions
  1. Heat the oil in a pan over medium heat.
  2. Add all the ingredients and cook covered, 40minutes, adding more water as needed.
